Fishermen like Thomas Amort have caught and smoked fish from Lake Königssee in southern Germany near the Austrian border since the 11th century. Here, he's looking for ingredients to prepare a delicacy that used to be served in the Bavarian royal court: Schwarzreiter, or char that has been smoked for hours on wooden hazelnut sticks over an open beech wood fire.
